What is movie night without popcorn?  The answer to that is nothing.  Ok fine, it is passable but not perfect.  One thing I have always loved, Parmesan popcorn.  The problem with that?  This little Betty is allergic to dairy.  So unless I want to risk hives (which I sometimes do, especially for a good brie or gorganzola), it is best that I stay away from the delicious dairy products.  So now what?  How do I carry one?  With a simple little thing, very popular in the vegan communities, called nutritional yeast.

Once you have the corn popped, I always go stove top version, you just need to top it with this simple mix of spices.

  • 1 tbsp nutritional yeast
  • 1 tsp salt
  • 1/2 tsp garlic powder

If you want to, add some butter (or vegan butter substitute) or olive oil before topping with the “parmesan”.  All that is left to do is curl up on the couch and enjoy.  Just make a lot if you have to share, it is going to go quickly!  For the record, champagne and root beer are my favorite beverage pairing options.
