Easter morning this little bunny hopped out of bed and went to get her bake on.  Only to realize silly rabbit, you have no chocolate chips!  How can you possibly make spicy double chocolate cookies without the second chocolate?!?  So I did a quick inventory of my supplies, oy I was also almost out of white sugar too!  But I did have a bunch of frozen fruit!  Which got me thinking, cobbler!  And so this recipe was born.  I was a little concerned that it would be a big fat stinker of a recipe, but everyone loved it!  I may or may not have gone back for seconds.  So without further ado, I present my completely improvised recipe for mixed fruit cobbler!

Base Ingredients:

  • 10oz bag frozen blueberries
  • 1 cup frozen peach slices
  • 1 grapefruit, sectioned
  • 2 tbsp. flour (I used gluten free)

Crust Ingredients:

  • 1 stick of cold butter, cut into small pieces
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 cup oats

Preheat oven to 375.  Use a non-stick spray and coat the bottom of an 8×8 baking pan.  Mix together all the base ingredients and pour into the pan.  Do not thaw the fruit before cooking.  Adding all the crust ingredients to a bowl, using either a pastry cutter or two forks, cut together the ingredients till it has a mealy texture.  You want the butter in little bitty pieces mixed in with the sugar and oats.  Pour the crust onto the fruit in the baking pan, but do not pack it down.  Bake for 25 minutes or till the crust is a medium brown, just a bit past golden brown.

This dish can be served warm or at room temperature.  Ice cream or whipped cream would be a lovely addition as well!
